My Favorite Gluten-Free Cookie Recipes
You don’t want all healthy snacks all the time—am I right? Let’s sweeten things up with two delicious cookie recipes from my collection that haven’t yet made it into Recipes from Auntie Clem’s Bakery!
Chocolate Chip Cookies
Ingredients:
- 1/2 cup sugar
- 1/4 cup shortening, melted
- 1/4 cup honey
- 1 cup buckwheat flour
- 1/2 cup arrowroot powder
- 1/4 tsp salt
- 1/2 tsp baking soda
- 2 Tb non-dairy milk
- 1/2 cup chocolate chips
Instructions:
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the buckwheat flour, arrowroot powder, salt, and baking soda.
- In a separate bowl, cream the sugar, honey and shortening.
- Pour the wet ingredients into the dry ingredients and mix. Add milk 1 Tb at a time and scrape down sides. Only add as much as necessary to form a dough that will stick together. Too much, and it will be very difficult to handle and will spread out when baked.
- Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand.
- Bake the cookies for 10-12 minutes, or until they are lightly golden brown around the edges.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy!
Ginger Cookies
Ingredients:
- 1/2 cup sugar

- 1 cup buckwheat flour
- 1/2 cup arrowroot powder
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 tsp baking soda
- 3 Tb non-dairy milk (or water)
Instructions:
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the buckwheat flour, arrowroot powder, ginger, cinnamon, nutmeg, salt, and baking soda.
